Abstract

Molecular modeling is used to evaluate the behavior of nutritionally relevant compounds at the molecular level. The characterization of such interactions, in addition to data obtained from established biochemical and physiological tests, contributes significantly to a better understanding of the importance of individual components of food in preventing diet-related conditions, such as cardiovascular disease, cancer, diabetes. mellitus, etc.
