Abstract

 

Avocado peel is a by-product obtained in large quantities in the food industry without further applications despite its richness in bioactive compounds. In this context, a “green efficient” microwave-assisted extraction (MAE) was optimized to maximize the extraction of bioactive polyphenols.

The article delves into the possible applications of the food industry of this extract as a functional food ingredient or as a nutraceutical with antioxidant and anti-aging activities.
