Abstract
CSIC researchers, together with the companies Oleica and Culinary Concepts, have developed a salmorejo enriched with the probiotic Lactiplantibacillus pentosus (LPG1). This product is designed for those consumers who cannot incorporate probiotics through lactic matrixes or who require a low-cholesterol diet.
