Investigadores del CSIC desarrollan un salmorejo probiótico

Abstract
A multidisciplinary team made up of researchers from the CSIC of the Institute of Fat (IG CSIC) in Seville, the startup Oleica and the Córdoba-based company Culinary Concepts Group (Salmoreteca) have developed, after more than two years of study, a probiotic vegetable cream ready to consumption. Probiotics are living organisms that have potentiating effects in people, and they can be ingested through food. The new product can be used as a source of beneficial microorganisms for consumers who have a certain degree of lactose intolerance and who cannot consume probiotics through dairy products, or who need a low cholesterol diet.
