Abstract

 

Dietary polyphenols, including quercetin, are secondary plant metabolites that have been reported to prevent many chronic diseases; however, quercetin’s high hydrophobicity results in low water solubility and bioavailability, limiting therapeutic efficacy and preventing new applications in aqueous systems. Encapsulation can be a possible solution to the aforementioned problems.
