Abstract

Banana peel is a source of bioactive compounds. These elements can help fight against different diseases or infections, which justifies a greater depth in the investigations. In addition, this class of product shows great potential as a source of functional ingredients and packaging materials in food products.

The use and recovery of agricultural by-products is a growing trend within the food industry, which also contributes to the efficient use of resources and the fight against food waste. Likewise, the banana peel, being used in some areas of the world as food, has great potential to become a functional food.
